Ingredients
→ Crust
1/2 cup butter, at room temperature
1/2 cup sugar
1 cup all purpose flour
1/8 teaspoon salt
→ Grapefruit Filling
2 large eggs
3/4 cup sugar
3 tablespoons all-purpose flour
1 grapefruit, zested and juiced (need 1/4 cup juice)
Powdered sugar for dusting
Instructions
Heat oven to 350°F. Create parchment paper sling in 8×8 inch pan using two overlapping pieces.
Beat butter and sugar until light and fluffy, about 3 minutes. Mix in flour and salt. Press evenly into pan.
Bake until lightly browned, 15-18 minutes. Remove and set aside.
Whisk eggs and sugar for 1 minute until slightly thick. Add flour, grapefruit juice and zest. Pour over warm crust.
Bake until lightly browned and set, 18-20 minutes. Cool completely, then cut into 16 squares.
