    WHAT SUGAR SHOULD I USE?

    There is no one answer to this question. All forms of white sugar will work—superfine, granulated, coarse, raw, and even powdered sugar (scroll down for special instructions for coloring powdered sugar). The only exception is light or dark brown sugar.

    The idea of coloring sugar to make sprinkles might seem unnecessary. But unless you live close to a bakery supply store, it’s hard to find specific colors of sanding sugar. Making colored sanding sugar at home ensures you have the colors you need. Also, it will save you a trip to the store if you find yourself without a particular color.

    LET THE SUGAR DRY, RUN THE CLUMPS THROUGH A FINE SIEVE.

    HOMEMADE SPARKLING SANDING SUGAR INGREDIENTS LIST- full printable recipe below in recipe card

    • 1 cup clear sparkling sand sugar, or regular granulated sugar
    • A few drops of gel food coloring (NOT LIQUID)

    COLORFUL SANDING SUGAR INSTRUCTIONS

    1. Place 1 cup of sugar in a plastic bag.
    2. Add the gel food coloring, beginning with 1 or 2 drops.
    3. Seal up the plastic bag and knead the food gel into the sugar.
    4. After evenly distributing the color, add the ¼ teaspoon of cornstarch and knead until everything is incorporated.
    5. Spread the colored sugar onto a baking sheet and let it dry for about 30 minutes.
    6. If there are clumps in the sugar, push it through a fine sieve.
    7. Store colored sugar in glass jars, not plastic bags or containers. It will stay fresh for at least six months and, in most cases, longer.

    TIPS FOR MAKING HOMEMADE COLORED SUGAR

    • Work in small batches of sugar; it’s easier to distribute the color.
    • If the color is too dark, add more sugar.
    • DO NOT STORE colored sugar in plastic bags. The bags are not airtight and will let moisture into your sprinkles.
    • Use clear or white store-bought sanding sugar to color for larger sugar particles.
    • I recommend using gel food coloring, especially if you want to achieve a dark color. Compared to using water-based food coloring, you’ll need less food coloring, which means adding less moisture to the sugar.
    • When using store-bought sparkling sugar, reserve one without color. Add several colors with the white/clear sprinkles to create a stunning multicolored mixture.

    Coloring Sugar Results – Which Sugar Works Best

    • STORE-BOUGHT WHITE OR CLEAR SPARKLING SANDY SUGAR: The store-bought type worked amazingly for a nice chunky decorating sugar. The sugar easily absorbs the color and produces a beautiful sanding sugar.
    • TABLE GRANULATED WHITE SUGAR: Making fine-grain colored sugar at home is easy, and the sugar absorbs the color beautifully. The only downside is that granulated sugar doesn’t offer the same sparkle as the store-bought version. The fine grain is great on decorated pretzels. It’s lightweight and won’t drag down the melted candy.
    • RAW SUGAR: This one was odd, but I think in a good way. Some grains took to the food coloring and others didn’t, creating multi-colored sprinkles. I used a dark blue, which gave it a cool denim look.

    How to Color Powdered Sugar

    You might be thinking, “Why do I need colored powdered sugar? ” Well, obviously, you don’t, but if you love themed food, colored powdered sugar is a game changer. It’s perfect for crinkle cookies, sprinkling on top of treats or French toast, and making a dramatic, colorful sugar drizzle. Colored powdered sugar adds a lot of fun to any treat or dish.

    • POWDERED SUGAR + GEL FOOD COLORING: In a food processor, add the sugar, turn the processor on, and then add a few drops of the gel food coloring. When adding the gel food coloring, be careful; it’s easy to add too much, and if that happens, you will end up with a gummy mess. Pour colored sugar onto a baking sheet, break up chunks, and dry. Adding even the smallest amount of gel food coloring will add moisture to the sugar, which needs to dry. TIP: If you’re in a hurry, turn your oven onto the lowest temperature, let it come to temperature, turn off the heat, add the sugar, and let it sit in the oven until the oven is cooled. The warm air will dry out the sugar. DO NOT ADD YOUR SUGAR TO A CONTAINER UNTIL IT IS COMPLETELY DRY.
    • STORE-BOUGHT COLORED SUGAR: Pour sugar into the bowl of a food processor. YOU DON’T HAVE TO ADD FOOD COLORING. THE SUGAR IS ALREADY COLORED, SO THERE IS NO DRYING TIME. The downside is that it takes a long time to process the sugar into a powdered state. You won’t achieve the same powder texture as powdered sugar, but you will get close.
    • POWDERED SUGAR + COLORED POWDER: The best choice of all three. Since the coloring is already powder and highly concentrated, drying is unnecessary. The result is a beautiful color. Add the powdered sugar to the bowl of a food processor (½ cup powdered sugar with ½ teaspoon of colored powder)

    How to Make Flavored Colored Sanding Sugar

    If you have a concentrated flavoring with an intense color ( like Ube extract), you only need a small amount of the flavoring. If that’s not the case, add one drop of color with one drop of flavoring (vanilla extract) per 1 cup of sugar. Use a spoon to mix or add to a zip-top bag and knead the color and flavoring into the sugar. Continue until you have reached the desired flavor and color.     Ingredients

    Instructions

    1. Place 1 cup of sugar in a bowl.
    2. Add the gel food coloring, beginning with three drops. If you want a more intense color, add a couple more drops.
    3. Use the back of a spoon to work the color into the sugar.

    Everything you Need to Know About How to Decorate Pretzels Part 3


    Welcome to part three of our pretzel decorating series! In this post, we’re diving into more advanced techniques like working with caramel, creating stunning tri-color designs, achieving a beautiful marble effect, and more. If you haven’t read parts one and two yet, we strongly encourage you to check those out first, especially if you’re new to pretzel decorating. Part one covers the essential basics, while part two builds on those skills with fun, themed creations. Each post lays the groundwork for the next, so make sure you’re caught up before jumping into these more challenging (but totally doable!) techniques.

    Decorate Pretzels with the Caramel Technique

    CREATE A PRETZEL WITH A SURPRISE INSIDE…CARAMEL!

    After experimenting with four different caramel options, here are my findings. You can decide which one is your favorite. Some of the caramel options are easier than others. Please scroll down for all the details and find my favorite.

    • CARAMEL BITS
    • SALTED CARAMEL FLAVORED MELTING CANDY:
    • WRAPPLES:
    • KRAFT CARAMELS:
    • WERTHER’S CARAMELS:
    • MAKE HOMEMADE CARAMEL WRAPS:

    CARAMEL BITS: Heat the caramel bits for 1 minute, stir, and heat for an additional 30 seconds. Set aside for 5 minutes. Dip the pretzels and place them on a cookie sheet lined with parchment paper. I wasn’t too impressed with the caramel bits. They were very messy, and I had to dip them twice to get enough caramel coating.

    SALTED CARAMEL MELTING CANDY: I found this melting candy at Michael’s. The brand is Sweet Tooth Fairy Meltables Salted Caramel. If you use the melting candy, pour it into a microwave-safe container ( I used a tall glass cup) and add one tablespoon of vegetable shortening. Heat for 1 minute and stir until the candy is melted. Place the dipped pretzels on a cookie sheet lined with parchment paper. To harden, either set them aside on the counter or, for quicker results, place them in the refrigerator (about 10 minutes). The candy had a decent flavor, but I missed the chewy caramel center.

    WRAPPLES: A fun seasonal product found in the Fall months in the produce department of most grocery stores. If you happen to find some, GRAB THEM! The Wrapples have a nice caramel flavor and are super easy to use. One Wrapple will cover THREE pretzel rods. Cut the wrapples into thirds, wrap and mold the caramel disk around the pretzel rod. This one wins for its easy use, and the flavor is tied with the wrapped caramels. The only downfall is that they are seasonal. Look below to see how I solve that problem.

    KRAFT WRAPPED CARAMELS: If you can’t find the Wrapples caramel wraps, this is the next good option. Use 2-3 caramels per pretzel. Unwrap four caramels, microwave them for 10 seconds, and mold them around the pretzel. Only cover one pretzel at a time; repeat until all the pretzels are covered.

    WERTHER’S ORIGINAL SOFT CARAMELS: These caramels are softer and a little smaller than the Kraft Caramels. The flavor is about the same as the Kraft brand. For a pretzel rod, you will need four caramels. Remove the wrapper, combine them into a ball, and microwave for 6 seconds. Lay the softened caramel on a piece of parchment paper and roll it into a 4-inch disk, mold it around the pretzel, and pull and shape it to the desired length.

    THREE Marbling Techniques

    When you look at my technique for the marbling effect, you may see that there is some waste.  Remember this…..you will create TWELVE incredible-looking party pretzels for under $10.  Most techniques call for a tub of melted candy (the primary color), drizzling the other colors on top, and then dipping the pretzel in through the drizzled colors—it’s hard to keep the colors from becoming muddy looking.  I don’t think that technique works as well as the one I do here.     Combining Caramel and Marbling Technique

    Counter Top Heating Pad Method for Marbling

    CANDY PUDDLES: HOW TO GET RID OF CANDY PUDDLES. One of my favorite tips when decorating pretzels is using a microplane tool for the edges that have puddled under the pretzel. I’ve used the micro plane for years and recently switched to a paring knife. Regardless of your chosen tool, they will both get the job done. Carefully scrape off the excess melted candy. NOTE: CANDY MUST BE HARD FOR THIS TO WORK

    • FIRST, AN IMPORTANT TIP. For the best results, use a heating pad. I used a warming pad for bread. Take the cover off if you’re using a household heating pad with a cover. Using a heating pad is unnecessary for marbled, decorated pretzels, but it will be a valuable addition to your pretzel-making tools. The other option is to put an oblong pot holder under the parchment paper. THE REASON FOR THE HEATING PAD: If your counter is like mine, it stays pretty cool, and because of that, the candy will harden before you have a chance to use up all the candy.
    • Place a pretzel rod in the center of a piece of parchment paper; with a pencil, mark the top of the pretzel, the middle, and the bottom of where the candy will end. So the guests can easily handle the pretzels, I like to leave a couple of inches at the bottom. This step is to be used as an easy guideline, but it doesn’t have to be done. Flip the paper over so the pencil marks are on the bottom.
    1. Place another sheet of parchment paper to the side, another one to the side, and a fourth piece on a cookie sheet.
    2. Pour candy melts into small microwave-safe bowls.
    3. Heat only one color at a time, 1 minute for each, stir until melted and creamy.
    4. TIP: The countertops are cold; to keep your candy warm longer, place the bowls on a pot holder.
    1. Place a piece of parchment paper on a heating pad. Using your guideline, spoon a good amount of the white melted candy at the top, followed by the orange, and ending with the yellow, making sure to use the bottom line as your guide. NOTE: DO NOT ADD ALL THE CANDY OF EACH COLOR AT ONCE. SAVE SOME FOR LATER.
    2. Dip the tip of the pretzel in the white, then lay it flat and roll it in all three colors.
    1. Swiftly move off the parchment paper with the three colors to a second piece of parchment paper, and lightly tap any excess candy off the pretzel.
    2. Lay the third piece of parchment paper to rest for a minute. Remember, your countertops are cold, and the candy will set up quickly. While the pretzel rests, continue coating the pretzels (about five more). Once the pretzels have rested and are still wet, pull them straight up off the third piece of parchment paper and place them on the clean piece of parchment paper on the cookie sheet. NOTE: PLACING YOUR PRETZELS CLOSE TOGETHER BUT NOT TOUCHING WILL HELP WITH THE AMOUNT OF PARCHMENT PAPER USED. Place in the refrigerator to harden (about 10 minutes. *SEE BELOW ABOUT CANDY PUDDLES
    3. TIP: As the piles of white, orange, and yellow deplete, spoon on the remaining candy and continue coating the pretzels.
    4. Once all the pretzels have been coated and the candy has hardened, if choosing, it’s time to add the dust luster.
    • DUST LUSTER: This step is optional but adds a wonderful iridescence to the pretzels. Mine is in powder form, but spray form is also available. FOR THE POWDER: Pour some of the powder into a small bowl. Dip the brush in the powder and brush onto hardened candy using a clean brush. BEAUTIFUL!

    Ombré Decorated Pretzels

    Ombré Pretzels
    • 5 ounces white melting candy wafers, divided
    • 7 ounces pink melting candy wafers, divided
    • 20 pretzel rods
    1. In the first medium microwave-safe bowl, mix the lightest color—3 ounces white plus 1 ounce pink. NOTE: This will be the top color. Heat in the microwave for 1 minute. Stir until melted and creamy. Place on a heating pad, towel, or oven pot holders—anything that will create a barrier between the warm candy and the cold countertop. I prefer a heating pad.
    2. Mix the medium color in the second medium microwave-safe bowl—2 ounces of white plus 2 ounces of pink. NOTE: This will be the center color. Follow the exact instructions for the first color.
    3. In the third medium microwave-safe bowl—4 ounces of pink. NOTE: This will be the bottom color. Follow the exact instructions for the first color.
    4. Once all the colors have been heated and mixed, move them to a towel or an oblong pot holder. Add a piece of parchment paper to a heating pad, towel, or pot holder.
    5. Have another piece of wax paper ready to catch drips and a cookie sheet lined with parchment paper.
    6. If needed, place a pretzel on the piece of parchment paper on the counter barrier. Use a pencil to mark where the three colors should be. Flip the paper over so the pencil mark is on the bottom and not touching the candy.
    7. Starting with the lightest color, pour some of the candy on the top portion of the measured space. Continue adding the medium color to the center and the darkest color to the bottom.
    8. Place the pretzel rod flat and roll through the melted candy.
    9. Move to the wax paper and lightly tap any excess candy off the pretzel. Place the coated pretzel on the cookie sheet lined with parchment paper.
    10. Once all the pretzels have been coated, place the cookie sheet in the refrigerator for 10 minutes to harden.

    • ADD TO A DESSERT TABLE: The perfect size for small spaces and adds a pop of color.
    • USE AS A CENTERPIECE ON A KIDS TABLE: Edible centerpiece? Perfect!
    • FILL SMALL CONTAINERS (like buckets) AND LINE THEM DOWN THE CENTER OF A TABLE TO SERVE AS A RUNNER
    • ADD DECORATED PRETZELS TO A PRETZEL TREAT BAG AND HAND THEM OUT AS PARTY FAVORS
    • DECORATE MINI PRETZELS AND PUT IN PLASTIC CANDY CANES (pictured above)
    • FILL AN EMPTY DECORATED CAN WITH MINI PRETZELS AND GIVE AS A GIFT—MAKES A GREAT SECRET SANTA GIFT! (pictured above)
    • ADD MINI DECORATED PRETZELS TO PUSH UP POPS AND CREATE A FUN DISPLAY (pictured above)

    How to Store Decorated Pretzels

    Scroll down to number four to see what every hostess wants to hear. To keep your decorated pretzels fresh and looking great, follow these simple storage tips:

    1. Let them set completely:
    Before storing, ensure the chocolate or coating is fully hardened to prevent smudging or sticking.

    2. Use an airtight container:
    Place the pretzels in a single layer in an airtight container. If stacking, separate layers with wax or parchment paper to avoid sticking.

    3. Store in a cool, dry place:
    Keep the container in a cool, dry spot away from direct sunlight or heat. A pantry or cupboard works well. Avoid the refrigerator, as it can cause condensation that makes the pretzels soggy.

    4. Shelf life:
    Properly stored, decorated pretzels can last up to 2–3 weeks at room temperature.

    Optional for gifting:
    You can also individually wrap pretzels in clear treat bags and tie with ribbon for a cute and practical way to keep them fresh and ready to go!

    How to Store Melted Candy

    Homemade Cookies and Cream Pretzel Rods

    Spread melted candy on parchment paper and let it sit until hardened. Break the candy into small pieces and transfer the candy to an airtight container or zip-top bag. Store in a cool area like a pantry or cabinet. When ready to use again, add the candy to a microwave-safe bowl and melt it. NOTE: BECAUSE THE CANDY HAS BEEN MELTED ONCE, IT WILL NOT TAKE AS LONG TO MELT IT AGAIN, SO KEEP A CLOSE EYE ON IT.

    You get all the flavor but not all the calories. I can’t tell you how many times I’ve gotten a request to make this recipe. It’s one of the most asked for recipes from my family and I love making it for them since it’s so easy to make and more importantly NOT FRIED!

    BAKED CHICKEN CHILI RELLENO RECIPE INGREDIENTS LIST-full printable recipe below in recipe card

    • 6 medium boneless skinless chicken breasts
    • 1/3 cup cornmeal
    • 2 tablespoons taco seasoning mix
    • 1 large egg, beaten
    • 1 (4 ounce) can whole Hatch green chilies
    • 2 ounces Monterey jack cheese, cut into 6 strips or shredded
    • 2 tablespoons cilantro, chopped
    • 1/4 teaspoon crush red pepper
    • 8 ounces red bottled taco sauce
    • 2 ounces jack cheese, shredded
    • Optional: fresh cilantro, chopped

    BAKED CHICKEN CHILI RELLENO RECIPE INSTRUCTIONS

    1. Preheat oven to 375°.
    2. Pound chicken to 1/8 inch thickness.
    3. Combine cornmeal and taco seasoning mix.
    4. Place egg in another bowl and beat.
    5. Cut chilies in half lengthwise making six pieces.
    6. For each roll, place half of a chili pepper onto a chicken breast. Then add a strip of cheese and sprinkle on some cilantro and crushed red peppers.
    7. Roll up and dip into egg, then into cornmeal.
    8. Place chicken seam down in a shallow baking dish.
    9. Bake uncovered for 25-30 minutes or until golden brown.
    10. Heat taco sauce sprinkle chicken with cheese and optional fresh cilantro.
    11. Serve with sauce.
    12. Store any leftover chicken in an airtight container in the refrigerator up to 4 days.

    How to Roast Hatch Chile Peppers

    This technique works for any chili peppers or bell peppers. In the summer the farmer’s market is a great place to find different types of peppers. Pasilla peppers, hatch peppers are a great find. The poblano pepper is what’s used in the traditional Mexican dish.

    • Heat grill to medium high.  Place chiles directly on the grill.  Cover with lid.  Check and turn every few minutes.  You’ll want to keep an eye on these.  They can cook faster then you think.  Cook until blistered or charred skin on both sides (about 10 minutes per side).
    • When the skin is blistered and cracked, place on a baking pan.  Cover with plastic wrap, set the chiles sit on the counter until cool enough to handle.  Peel the skin from the chile and take off the top.
    • TIP:  I found it was easier to peel the pepper *BEFORE* removing the top.
    • Place in a freezer safe zip plastic bag and freeze.  Can be frozen up to a year.

    Yes, Cream Cheese would be phenomenal in chicken chile rellenos! Replace the Monterey Jack Cheese with the same amount of cream cheese.

    Air Fryer Chicken Cordon Bleu Recipe is a family favorite. It is a great way to take thinly sliced chicken and turn it into an amazing meal. This Blue Ribbon meal is stuffed chicken breast with thinly sliced ham, swiss cheese and topped with bread crumbs.

    What is Chicken Cordon Bleu?

    The reason that we call Chicken Cordon Bleu because Cordon bleu translate to Blue Ribbon Chicken. We couldn’t agree more. Air Fryer chicken is so tender and come out so flavorful and juicy.

    We love that this chicken can be made into your own recipe. It is traditionally made with slice of ham and swiss cheese, but we have gotten creative with this recipe and used different cheeses and seasoning.

    • Chicken – Make sure your pound the chicken about the same size so that it cooks evenly.
    • Meat Thermometer – To make sure you chicken is full cooked, make sure to use an instant-read thermometer to check internal temperature.

    Air Fryer Chicken Cordon Bleu is a great way to jazz up a chicken. It has layers of ham and swiss cheese and is air fried to perfection.


    Ingredients

    Scale
      • 6 Boneless Skinless Chicken Breasts
      • 6 thin Slices of Ham
      • 6 Slices Swiss cheese
      • 1/2 tsp Salt
      • 1/2 tsp Pepper
    • 1/2 cup Breadcrumbs
    • 1/2 cup Panko Breadcrumbs
    • 1/4 cup Grated Parmesan Cheese
    • 2 large eggs

    Instructions

    • Preheat the oven to 400 degrees F and spray a 9X13 baking pan or large baking sheet with a non stick cooking spray.
    • Gently pound the chicken breast until it’s 1/4-1/2” thick.  I place plastic wrap on top of the chicken and beat with a wooden mallet or rolling pin.  Be careful not to over beat as the chicken will tear.
    • Then lay the chicken on a work surface and season it with salt and pepper.
    • Top each chicken with a slice of the ham and a slice of the cheese.  Roll the chicken and sit them aside seam down.
    • Then place the eggs in a shallow bowl and whisk them.
    • Then stir together the breadcrumbs and Parmesan Cheese together in a separate shallow bowl.
    • Dip each piece of chicken into the eggs to coat. Then dip the chicken into the breadcrumbs mixture to fully coat it.  Pat the breadcrumbs into the chicken to make sure that it sticks to all the sides of the chicken.  Then place the chicken in the baking pan.
    • Spray all sides of the chicken with oil.
    • Preheat the air fryer to 400 degrees F.  If your air fryer does not have a preheat option, then let it run at 400 degrees F for 5 minutes to warm it up.
    • Cook the chicken for 12-15 minutes, flipping it halfway through until the chicken reaches an internal temperature of 160 degrees F.  Make sure to only check the chicken layer when checking for the doneness of the chicken. You will likely need to cook the chicken in batches as you do not want them to overlap or touch in the air fryer.
    • Then let the chicken rest for 5 minutes and then it’s ready to enjoy!

    Make Cheesecake

    In a large mixing bowl, combine cream cheese with sour cream, eggs, vanilla extract, sweetened condensed milk, sugar and cinnamon. Use a hand mixer to mix well until smooth and no chunks remain.

    Assemble Cheesecake

    Roll out one can of crescent dough to approximately match the size of the baking dish. Lay it into the bottom of the dish, pressing it to evenly cover the bottom. It’s ok if it doesn’t look perfect, it will be covered. Sprinkle the crescent dough with an even coating of cinnamon-sugar to cover the dough.

    Pour in the cheesecake filling. Repeat the same process with the dough, laying it on top the cheesecake. Work gently as to not make the dough sink. It doesn’t need to look perfect.

    Bake Cheesecake

    Bake for 40-45 minutes. A toothpick inserted in the center comes out clean indicates its fully cooked.

    Place cheesecake on top of a cooling rack or stove to allow heat to escape from under the dish, cool about 1 hour,. Cover tightly and refrigerate for 8 hours before serving (ideally overnight). Cheesecake is better the second day, so make ahead if possible.

    How to Store Churro Cheesecake Bars

    When you make this churro cheesecake recipe, it can last up to 4 days in the fridge (tightly wrapped or in an air-tight container). If you want to save this for a future date they freeze really well.

    I recommend cutting them into the desired size first. Then individually wrap them in plastic wrap and place into a zip-top bag. Sometimes we’ll but them into small one-bite size pieces for topping on ice cream sundaes or for snacking.

    Ingredients

    • 28 oz. cans Pillsbury crescent dough sheets
    • 38 oz. blocks cream cheese, softened softened
    • 1/2 cup sour cream
    • 3 eggs

    • 1/4 cup sugar
    • 1/2 teaspoon cinnamon

    Instructions

    Basted throughout the cooking process, these garlic parmesan chicken skewers are so tender they just fall right off the skewers.

    After my Garlic Parmesan Chicken Skewers and Hot Lemon Pepper Chicken Skewers went crazy on social media, I had to give ya’ll with another incredible flavor using the same easy and fail-proof method. This is a spin on my Garlic Parmesan Chicken Skewers. By adding some ranch seasoning and dill, we truly kick up these succulent skewers up another notch. 

    You can easily make these Ranch Garlic Parmesan Chicken Skewers in the air fryer (method used for the photos) or you can bake or grill them. I  paired my skewers over warm rice and added some of the leftover garlic-parm butter into the rice for the most incredible meal.

    Key Ingredients in Ranch Garlic Parmesan Chicken Skewers

    • Chicken Tenders – you can use breast or thighs but I prefer how moist tenders are.
    • Butter – one stick of butter is used.
    • Garlic – lots of garlic is used, about 8-10 cloves
    • Parmesan – grated parm is the best for this recipe as it easily incorporates in the butter sauce.
    • Hot sauce – just a tablespoon to give this chicken a little kick without adding too much heat.
    • Ranch Seasoning – a few tablespoons of dry ranch seasoning is added to the chicken dry rub and to the garlic butter sauce.
    • Seasonings – paprika, garlic powder, onion powder, salt, pepper, and red pepper flakes
    • Fresh Parsley – the fresh parsley adds the perfect herbiness to balance the savory butter sauce.
    • Don’t forget the wooden skewers!

    How to Make Ranch Garlic Parmesan Chicken Skewers 

    Step 1: Soak wooden skewers in water for at least 30 minutes.

    Combine spice mixture in a small bowl and set aside. Prep your chicken by cutting in 3″ pieces. Place them in a bowl and toss in olive oil and the spices, coating well on all sides.

    Step 2: Pack the chicken onto each skewer, making sure they are tightly packed with no space in between to ensure maximum juiciness. If needed, snip the top few inches of the skewers to fit in the air fryer after the chicken is skewered

    Step 3: Make the garlic parmesan sauce by combining all ingredients into a saucepan over low heat. Scoop out 1/3 of the sauce and use that for basting the chicken as it cooks. Reserve the remaining sauce for basting the cooked chicken so you don’t cross contaminate.

    Step 3: Cook 2-3 skewers at a time in an air fryer at 400 degrees for 5 minutes. Remove and flip the skewers and baste with sauce, returning to cook an additional 2 minutes at 400 degrees.

    Baste with more sauce and cook another 5-6 minutes or until the internal temp reaches 165 degrees. A total cook time of 12-14 minutes. Once they are finished cooking, hit them with a final pass of the garlic sauce (the reserved sauce) and sprinkle with some parmesan and serve.

    There are a few reasons that the garlic parmesan butter sauce might break, one of the most common reasons is the sauce getting too hot. Luckily, there is an easy way to fix this.

    Simply adding 1-2 tablespoons of softened butter into the sauce and whisking gently until it emulsifies back into a soft and smooth slightly-melted paste.

    Don’t Have an Air Fryer? Try These Methods:

    Oven Preparation:

    Preheat oven to 450 degrees. Place chicken skewers on a rimmed baking sheet lined with foil and cook for 14 minutes, flipping half way through and basting with butter a few times throughout the baking process. 

    Switch the oven to broil and cook an additional 2 minutes so get the tops golden brown. Remove from the oven and baste it one last time with the butter sauce and sprinkle with leftover parmesan. 

    Grill Preparation: 

    Preheat your grill to medium-high. Place the prepared skewers over direct heat and cook each side for 5-6 minutes each, basting with butter throughout the cooking process. 

    Remove from the grill and baste it one last time with the butter sauce and sprinkle with leftover parmesan.

    Ingredients

    • 2 lbs chicken tenders thighs or breast
    • 2 tbsp olive oil

    Garlic Parmesan Butter Sauce

    • 1 stick butter
    • 810 cloves garlic minced
    • 1/2 cup parmesan grated
    • 1 tbsp hot sauce more if desired
    • 2 teaspoons red pepper flakes
    • 1/3 cup fresh parsley minced
    • 1 tablespoon dry ranch seasoning
    • 1 teaspoon dried dill
    • 1/2 teaspoon onion powder

    Chicken Seasonings

    • 1.5 tablespoon dry ranch seasoning
    • 1 teaspoon dried dill
    • 2 teaspoons paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper

    Instructions


    Prep and Skewer Chicken

    • Before you start, make sure to soak your wooden skewers in water for at least 30 minutes.
    • Start by combining your chicken seasoning mixture in a small bowl and set aside. Prep your chicken by cutting in 3″ pieces. Place them in a large bowl or ziptop bag and toss in olive oil and the spices, coating well on all sides.

    Make the Garlic Parmesan Butter Sauce

    • Add the butter and garlic in a microwave-safe bowl and heat until partially melted. Then add in red pepper flakes, hot sauce, seasonings and parmesan. Whisk together until combined. (If sauce separates, add 1-2 tablespoons of softened butter and stir to re-emulsify.)
    • Scoop out 1/3 of the sauce and use that for basting the par-cooked chicken. Reserve the remaining sauce for basting the cooked chicken so you don’t cross contaminate. Be sure to wash your basting brush in between.

    Cook The Chicken

    • Cook 2-3 skewers at a time. Place in an air fryer and cook at 400 degrees for 5 minutes. Remove and flip the skewers, baste with sauce, return to cook an additional 2 minutes at 400 degrees.
    • Flip them back, baste with more sauce and cook another 5-6 minutes or until the internal temp reaches 165 degrees. Total cook time of 12-14 minutes. This time will vary based on your air fryer.
    • Once they are finished cooking, hit them with a final pass of the garlic sauce (the clean reserved sauce) and sprinkle with some extra parmesan and serve.

    Why You’ll Love Cowboy Butter Steak

    Cowboy butter has become even more popular in the recent year or so, including my Cowboy Butter Steak Sliders that went super viral last year. I first hear about cowboy butter from the Pioneer Woman back in 2015 although her version was simply garlic, parsley and red pepper added to butter.

    I’ve created my own version adding lemon juice and zest, dijon mustard, red pepper or cayenne, green onions and parsley, garlic and dried thyme. It’s robust, herbaceous and tangy with a kick of heat. And so delicious you’ll want to smother it over everything.

    Key Ingredients

    Here are all the elements to make this easily bring this cowboy butter steak recipe together:

    Steak – a quality, tender cut such as ribeye or tenderloin filet. Starting with a quality cut is the most important step in this recipe being a success. Costco has great options!

    Butter – I love using Kerrygold or similar Ireland/European butter. But you can use regular butter as well.

    Herbs – dried thyme, fresh parsley, fresh chives or green onions.

    Garlic – freshly minced garlic is essential, skip the jarred alternative for this recipe.

    Seasonings – red pepper flakes or cayenne pepper, freshly cracked pepper and paprika

    Dijon Mustard – a little dijon adds a tangy sharpness that’s just enough to balance out the creamy decadence of the butter.

    Lemon – adds a tangy acidity and lemon flavor from the zest and juice.

    Avocado Oil – if you’ll be cooking the steak in a cast iron skillet, be sure to use avocado oil instead of olive oil for the high smoke point.

    How to Make Cowboy Butter Steak

    In just a few easy steps you can be enjoying a tender, juicy steak with melty cowboy butter. In these instructions I share a cooking method for grilling or for making it in a cast iron skillet indoors.

    Make the Cowboy Butter

    Add softened butter to a bowl with all the cowboy butter ingredients. Heat in the microwave for 10 seconds until it’s barely melted. Don’t fully melt or the butter can break/separate.

    If you want to make a firm compound butter, skip the melting part. Instead, place the softened cowboy butter onto plastic wrap and roll it into a log. Then refrigerate until firms up. When you’re ready to use it, slice and add to the top of the warm steak.

    Cook the Steak (Grill Method)

    Preheat grill to medium-high with an indirect heat zone. Remove steaks from the fridge and allow them to rest at room temp for 30 minutes.

    Cook steaks over direct heat for about 2-3 minutes per side, being sure not to char them. If high flames appear, move them to indirect heat until flame subsides.

    Brush both sides with cowboy butter as they cook. After 5-6 minutes of total cook time, move the steaks to indirect heat until desired temperature is reached.

    Remove and allow steaks to rest on a plate with tented foil for 10 minutes before slicing. Serve with cowboy butter on top or on the side.

    Cook the Steak (Cast Iron Skillet Method)

    Heat 1-2 tbsp avocado oil in a cast iron skillet over medium-high heat until it’s shimmering.

    Place the seasoned steaks in the skillet and cook for 4 minutes on one side without touching. Use tongs to flip the steaks and cook for 4 more minutes on the other side.

    Reduce heat to medium-low, add a few spoonfuls of cowboy butter. As the butter melts, tilt the skillet and spoon the butter over the steaks repeatedly until the steaks reach desired doneness.

    Transfer the steaks to a plate or cutting board, and allow them to rest for 10 minutes before slicing. Serve with cowboy butter on top or on the side.

    Tips and Modifications

    Make it ahead – you can easily prepare the cowboy butter ahead, cover tightly and store in the fridge for up to 1 week. When ready to use you can warm it in the microwave in 5-7 second bursts until it’s softened and partially melted.

    Create a Compound Butter – instead of a melted butter sauce/dip, you can turn this into a compound butter instead for slicing and topping the steaks.

    Use it for Chicken – I love how delicious this flavorful butter is on chicken. It pairs perfectly on poultry. Whether it’s grilled chicken or chicken tenders you’ll love this on chicken.

    Use it on Veggies and Side Dishes – use cowboy butter on your mashed potatoes instead of butter, or to sautéed asparagus or green beans, or even Brussels sprouts and pan fried sweet corn.

    Ingredients

    • 22.5 pounds high quality steak such as ribeye or tenderloin filet. You can also use top sirloin but it won’t be as tender
    • 23 tbsp avocado oil if using a cast iron
    • kosher salt to taste
    • freshly cracked black pepper to taste

    Cowboy Butter

    • 1 stick butter mostly melted
    • 4 cloves garlic minced
    • 1/2 lemon zested + 1 tablespoon juice
    • 1 tablespoon dijon mustard
    • 1 teaspoon paprika
    • 1/2 teaspoon cayenne or red pepper flakes
    • 1/2 teaspoon dried thyme
    • 1 teaspoon red pepper flakes or cayenne powder
    • 1 tablespoon chives or green onions sliced
    • 2 tablespoons fresh parsley minced
    • salt and pepper to taste
    • optional: rosemary sprig and smashed garlic for the cast iron preparation

    Instructions


    • Add 6 tablespoons softened butter into a bowl followed by 4 minced garlic cloves, dijon, lemon zest and juice, seasonings and herbs. Heat in the microwave about 7-10 seconds until barely melted.
    • Remove steaks from the fridge 30 minutes before cooking to remove the chill. Pat them dry with a paper towel and season with salt and pepper or your favorite steak seasoning (see notes for my steak seasoning).

    Grill Method

    • Place the steaks in the skillet (being careful not to overcrowd the pan) and cook for 4 minutes on one side without touching. Use tongs to flip the steaks and cook for 4 more minutes on the other side.
    • Reduce heat to medium-low, add a few spoonfuls of cowboy butter (and rosemary sprig and smashed garlic optionally) into the pan. As the butter sizzles, tilt the skillet and spoon the butter over the steaks repeatedly until the steaks reach desired doneness.
    • Transfer the steaks to a plate or cutting board, and allow them to rest for 5 minutes before slicing or serving. Serve with the melted butter, garlic and rosemary from the skillet.

    The Hot Orange Chicken Panda Express has dropped on their menu this week is all the rage on the internet and social media. After trying it myself, it was love at first bite! And since this hotty is only available at their restaurants for a limited time, I just knew this was a recipe that deserved a homemade remake we can all enjoy once it disappears.

    Tender chicken breasts are sliced into bite sized pieces, fried crispy and tossed in a sizzling wok full of fragrant spices, garlic, and a citrusy tangy sweet sauce. This copycat recipe is a spin on their classic Orange Chicken amped up with tons of chilies! The spice is intensely fiery delicious but not overwhelming as it’s complimented by the sweet tanginess of the orange chicken.

    Why You’ll Love Hot Orange Chicken 

    If you haven’t tried Panda Express Hot Orange Chicken you absolutely must make this at home. Panda Express locations aren’t saturating each street corner and they can be out of reach for lots of us. So if you’re curious (or already a lover of their Hot Orange Chicken), you gotta try it. Here’s why:

    Fiery Spice – the six scoops of red pepper flakes and szeschuan red chili peppers add the perfect warm heat without being unbearable.

    Better Than Panda Express – yes, I said it. This hot orange chicken was selected by everoyone in a blind side-by-side taste test. 

    Sticky Sweet – the balance of tang, sweetness and spice is perfectly balanced.

    Lots of Citrus – arguably more “orangey” than Panda Express’ version. The fresh zest and juice yield a strong orange flavor.

    What is Hot Orange Chicken from Panda Express?

    The latest limited time menu item from Panda Express is a hot and spicy version of their famous and beloved Orange Chicken. It’s gone crazy on social media and according to Panda, they added dried whole red chili peppers and SIX scoops of red pepper flakes (where the traditional orange chicken has just one scoop). 


    Where to Find Ingredients?

    Most all of the listed ingredients can be found right in the asian foods/International aisle of your grocery store. If you are near an Asian mart (like H Mart) they will certainly have everything. The dried Szechuan red chili peppers are the only ingredient that can be tricky to find. If you can’t find them locally, Amazon sells a large bag that will last a while.

    Key Ingredients

    Chicken breasts – we’ll dice up boneless skinless chicken breasts into 1-2″ pieces. You can also use dark meat like chicken thighs, which is what they use in the restaurant.

    Orange juice + zest – a whole orange is zested and added to the sauce. Be sure you have a microplane or zester to remove the zest without removing the pith (the white bitter part).

    Brown sugar – the brown sugar adds a caramely sugar taste. 

    Soy sauce – the salty element for the sauce. I always use a low sodium variation as to not overwhelm the dish with too much salt.

    Rice wine vinegar – this adds tanginess to the sauce. If you can’t find rice wine vinegar, you can substitute with distilled white vinegar or apple cider vinegar.

    Garlic – be sure to use freshly minced garlic and not the pre-minced kind in the jar as it doesn’t add a true distinct garlicky flavor.

    Sesame oil – just a few spoonfuls go a long way in added flavor. If you can get your hands on toasted sesame oil it’s even more intensely flavored.

    Flour + Cornstarch – the base for our chicken dredge. The cornstarch is also used in the sauce to help thicken.

    How to Make Hot Orange Chicken

    Step 1: Make The Sauce

    We’ll whisk together all of the ingredients in the sauce, then cover and set it aside until it’s ready to be used in the final step. 

    Step 2: Bread & Fry the Chicken

    Once the chicken is cut into bite-sized chunks, we’ll toss it in the egg+oil wash, then into the cornstarch+flour dredge. Dust off the excess flour and fry them in batches for about 3 minutes. 

    Step 3: Fire Up the Wok

    We start with sizzling up our chilies, red pepper flakes and garlic in a wok with hot oil. Once those sizzle for 30 seconds or so, we’ll add in the sauce and allow it to begin to thicken. Toss in the chicken and stir and toss until all the pieces are well coated and warmed through.

    Make The Orange Sauce

    • In a medium bowl, whisk together all of the ingredients for the sauce, then cover and set it aside until it’s ready to be used in the final step.

    Prep and Bread Chicken

    • Prep the dredge by adding cornstarch and flour together in a shallow pie dish (or similar). Whisk in the salt and pepper to it’s evenly distributed.

    • In a medium bowl, whisk together the eggs with 2 tablespoons vegetable oil. Whisk vigorously until the egg is no longer stringy and the mixture starts to emulsify.

    • Start to get the oil heated to 375 degrees in a heavy bottom skillet, wok or deep saute pan. Attach a thermometer to best manage the heat.

    • While oil is heating, work in batches placing diced chicken pieces into the egg wash. Coat well then toss into the dredging flour. Coat the chicken pieces well on all sides making sure no chicken shows through the breading.

    Stir Fry in Wok

    • In a wok, add 2 tablespoons of vegetable oil and heat over medium-high. Add in the chili peppers and red pepper flakes. Heat through about 15 seconds, stirring constantly.

    • Add in the garlic (and ginger if using) and sesame oil, cook another 15 seconds as you stir.

    • Pour the sauce into the wok to thicken. You’ll see it start to bubble on the edges and begin to thicken, about 2 minutes. Add the crispy chicken pieces to the sauce and toss multiple times to coat well and warm the chicken back up, about 1 minute. Serve over rice and top with green onion slices.

    Description

    Tender chicken breasts are sliced into bite sized pieces, fried crispy and tossed in a sizzling wok full of fragrant spices, garlic, and a citrusy tangy sweet sauce. This copycat recipe is a spin on their classic Orange Chicken amped up with tons of chilies! The spice is intensely fiery delicious but not overwhelming as it’s complimented by the sweet tanginess of the orange chicken. 


    Ingredients

    To Make Chicken

    • 2 lbs chicken boneless skinless breasts or thighs, cut into 12” inch pieces
    • 1 cup cornstarch
    • 1/2 cup all-purpose flour
    • 2 eggs
    • 2 tablespoons oil canola or vegetable
    • 1 tsp salt
    • 1/2 tsp white pepper
    • oil for frying

    To Make Orange Sauce

    • 1 cup orange juice
    • 1 orange, zest of
    • 3 tablespoons soy sauce
    • 4 tablespoons rice wine vinegar
    • 1/2 cup brown sugar
    • 2 teaspoons sesame oil
    • 1 tablespoon cornstarch
    • 1 tablespoon green onions, sliced plus extra for garnish

    To Stir-Fry

    • 2 tablespoons oil canola or vegetable
    • 1/2 cup dried whole red chili peppers
    • 6 teaspoons red pepper flakes
    • 1 tablespoon sesame oil
    • 2 cloves garlic, minced
    • optional: 1 tablespoon ginger, grated

    • Dust off the excess flour and fry them in batches for about 3 minutes. Be sure to adjust the heat as it will drop once the chicken is added. Place cooked chicken on a wire rack to drain oil.

    • Add in the garlic (and ginger if using) and sesame oil, cook another 15 seconds as you stir.
